Happy New Year!!!

I took a drive over to the new house yesterday morning and found it quite peaceful and serene as all the workers were off for the holiday! I was a little surprised, as they were all working on Christmas Eve, but had NYE off - its a strange world! haha  It was nice to drive down the empty street and really get a feel for what the neighborhood will be like without all those construction trucks and equipment. It will be a great place to raise a family. They have made some progress! Our neighbors houses are getting ready to get windows installed, and ours now has pipes and cement poured! Woohoo!!! Hopefully by the end of January we will have some walls and a roof?! I hope!





I'm up early, big surprise, as I barely made it to 7:30 last night! Patrick of course didn't stroll in until about 3:30am and said they were quite busy at work tonight. I'm anxiously awaiting our couch store to open today as they are supposed to be having a really great 5 hour sale today. Fingers crossed I can get an even better deal on the couch we picked out! I'm all about a good deal and clearance!

Our New Year's tradition is to have a nice dinner with family, but first I'll be making a pancake breakfast for Patrick and myself. We are having Beef on a Weck tonight (a tradition from up north in New York where Patrick's family is from). It is kind of like a roast beef sandwich that you dip in au jus, but the beef is thicker and the bun is what makes it! A little salty and soooo delicious! Some put horseradish on it, but not me! Patrick's Aunt and Uncle always send the family beef on a weck and homemade cookies every year!
A beef on weck is a sandwich found primarily in Western New York. It is made with roast beef on a kummelweck roll. The meat on the sandwich is traditionally served rare, thin cut, with the top bun getting a dip au jus and topped with horseradish. 

One other step in our foster to adopt journey is ready to be completed between now and May. We have purchased 2 life books, one for each child. We are required to have these and keep them updated daily. They will contain things like photos, appointments, logs and information, etc. It is something that will be shown back and forth between us and the birth parents and the court. I wish it was all cutesy and scrapbooky but there are some pretty important legal parts to it as well! I thought the titles were very fitting though!!!



Our business is getting ready to fully launch hopefully next weekend or week. I got the call on Tuesday to place our initial inventory of 355 pieces of clothes. I'm hoping to get an ETA on the shipment by Tuesday evening. Patrick has been a trooper helping me set up our space and wipe down hangers. I was able to sit down with my sponsor and go over some great tips for the business and ways to track for taxes and paperwork etc. I'm pretty stoked to use my new excel doc and see our profit over the next month!

Hopefully our business venture will help the next 4 months fly by. The countdown is on:
  120 days until we move! CANNOT WAIT!!!
